SEPTEMBER 11, 2011: Leucadia Farmer's Market
This weekend we participated in our first Farmer's Market in Leucadia! Aside from some major difficulties getting our virgin canopy to pitch, we had a great time and met some really nice people. Thank you to everyone who stopped by our booth to sample and purchase our salads. We really appreciate your business and hope to see you again next week, when we UNVEIL THREE NEW SALADS! For those of you unfamiliar with the market, check it out...It runs every Sunday from 10-2pm at 185 Union St. Encinitas 92024.

APRIL 2011: Newsletter
We were asked by a local fruit packing company, Samsons, to come up with a recipe for their quarterly newsletter. Since its Spring, they wanted a recipe that would feature their Crimson Lady peaches. We could have gone with the traditional peach cobbler, but that's not our style. So we came up with this AMAZING Grilled Peach Pizza. Check it out below! We've also included a recipe for making your pizza dough.
PIZZA DOUGH Makes two 10-12 inch pizzas
1 1/2 cup warm water, 105-115 degrees
1 package active dry yeast
3 1/2- 4 cups bread flour
2 TB olive oil
2 tsp honey
2 tsp salt
- In the bowl of an electric mixer, add the warm water. Sprinkle the yeast over the top of the water and let sit for 5 minutes, until the yeast begins to bubble. You may have to stir in order to get the process started.
-Insert the paddle attachment on the electric mixer. Combine the olive oil, half the flour, salt and sugar and mix on low speed for about a minute. Remove the mixing paddle and replace with a dough hook.
-Add the rest of the flour to the mixer and knead, on low to medium speed, until the dough is smooth and elastic, about 10 minutes. You can also knead by hand. If the dough is too wet add a little more flour.
-Brush all sides of the dough with olive oil and transfer to a metal mixing bowl. Cover with plastic wrap and let sit in a warm place until the dough doubles in size.
